2In a large bowl, mix the salt, brown sugar, paprika, garlic powder, onion powder, pepper, cumin, thyme, oregano, cayenne, sage, Worcestershire sauce, chicken broth, crushed garlic cloves, and bay leaves.
3Squeeze the lemon juice over the turkey and rub the spice mixture all over the surface of the bird, making sure to cover the inside as well.
4Place the turkey in a large marinating bag or wrap it in plastic and let it rest in the refrigerator for at least 4 hours, ideally overnight.
5Preheat the oil in a deep fryer or in a large pot with vegetable oil to 175°C.
6Carefully lower the turkey into the hot oil slowly, making sure not to cause splashes.
7Fry the turkey for about 3 minutes for each pound (450 grams) of the bird's weight. For example, if the turkey weighs 4.5 kg, fry it for about 60 minutes.
8Use a kitchen thermometer to ensure that the internal temperature of the turkey has reached at least 75°C in the thickest part of the thigh.
9Remove the turkey from the oil and place it on a tray with paper towels to absorb excess fat.
10Let the turkey rest for 10-15 minutes before carving and serving.
